Crazy Good Chicken and Broccoli


Do you love chicken and broccoli? Do you love the tangy taste of soy sauce, the tangy taste of garlic and the crunch of broccoli? If so you will love this recipe.


Makes 4 Servings


Ingredients:

3 Chicken Breasts

2 Broccoli Florets cut up

3 Garlic Cloves minced

1 Cup Jasmine Rice

2/3 cup soy sauce

2 TBSP Corn Starch

1 Lime (juice)

1 tsp salt

1 tsp black pepper

2 TBSP Stevia

1/4 cup Chicken Broth

1 TBSP olive oil


Mushrooms (optional)


Directions:

In large bowl mix together soy sauce, corn starch, chicken broth, lime juice, stevia, salt, and pepper


Cut up chicken into cubes and place in bowl. Let it marinade for 20 minutes.


In saucepan boil 1 and 1/2 cups of water. Add the rice, reduce heat to simmer and cover saucepan.


In large frying pan place the olive oil and garlic and heat on medium heat. Add chicken cubes to pan and cook until brown.


Once the chicken is cooked, add the broccoli and remaining sauce/marinade. Cook for approximately 5 minutes (or longer if you like your broccoli more cooked.


Serve over rice and enjoy!
