Is there much better than the savory taste of chicken parmesan? I personally love it and so had to come up with a healthy version of this recipe.
Ingredients:
4 chicken breasts
2 TBSP Olive Oil
1/2 cup whole wheat bread crumbs
1/4 cup parmesan cheese
1 tsp oregano
1 tsp basil
salt and pepper
1 - 28 can of crushed tomatoes
2 TBSP corn starch
1/2 cup Fresh Mozzarella
4 cloves garlic
Start by adding 1 TBSP olive oil to a large frying pan and turn on medium heat.
Use the remaining oil to rub over chicken breasts.
In bowl combine, bread crumbs and parmesan cheese. Take chicken breasts and coat
thoroughly with bread crumb mixture.
Then place chicken breasts in frying pan. Cook until slightly brown on both sides
(does not need to be cooked thoroughly).
In blender combine garlic cloves, can of tomatoes, basil, oregano, salt, pepper and
corn starch.
Blend until smooth.
In large baking dish place chicken breasts and pour sauce over them.
Bake at 400F for 20 - 30 minutes.
During last 5 minutes sprinkle shredded mozzarella
on top of chicken breasts.
Plate over whole wheat pasta noodles, spiralized zucchini, or eat on its own.
