Who doesn't like buffalo chicken? Combine it with some fresh avocado and quinoa and you've got an amazing meal.
Makes 4 servings
Ingredients:
3 chicken breasts cut in strips
1 cup (uncooked) quinoa
1 avocado
1 cilantro bunch
4 stalks of chives
4 TBSP lime juice
1/2 cup hot sauce
4 TBSP plain Greek yogurt
1 TBSP garlic powder
1 TBSP paprika
1 cup grape tomatoes
1 head green leaf lettuce
Salt and Pepper to taste
Directions:
In large bowl mix hot sauce, lime juice, garlic powder, paprika, and Greek yogurt.
Dip the chicken in the mixture and cook in frying pan.
Cook quinoa according to instructions on package.
Cut up lettuce, tomatoes, chives, cilantro and avocado and evenly distribute in 4 bowls.
Once chicken and quinoa is cooked, evenly divide it up into the four bowls and enjoy.
